– Chilli Mexican Beef –
I found the recipe for Chilli Mexican Beef at Nom Nom Paleo and your never going to believe how simple it is to make. It caught my attention when I realised that thousands of people had pinned this recipe on Pinterest! Using the pressure cooker you’ll be able to make this in a fraction of the time that you would if you used the stovetop or oven. You can serve it with some corn chips and salsa, on top of a baked potato or in a burrito, the options are endless!

Equipment:
Pressure Cooker – I used an electric pressure cooker
Ingredients:
1.3kg beef chuck roast cut into 2 – 3cm cubes
1/2 – 1 tablespoon chilli powder (depending on how hot you like it, I used 1/2 a tablespoon)
1 and a 1/2 teaspoons salt
1 tablespoon olive oil
1 medium red onion
1 tablespoon tomato paste
6 cloves of garlic
1/2 cup tomato salsa
1/2 cup beef stock
1/2 teaspoon fish sauce
Salt and pepper to taste
Preparation:
- Measure out all the ingredients.
- Peel your onion and cut it into slices.
- Peel and smash the garlic cloves.
Method:
1. Put your diced beef in a large bowl and add the chilli powder and salt.
2. Mix well to ensure the meat is evenly coated.
3. Pour the olive oil into the pressure cooker and set it to browning heat.
4. Add your red onions.
5. Stir them around so that they break up and cook for a minute.
6. Add in the tomato past and garlic.
7. Cook for 30 seconds or until fragrant.
8. Now throw in your beef.
9. Give it a quick mix.
10. Add the salsa, stock and fish sauce.
11. Mix again to make sure every things mixed in well. Put the lid on the pressure cooker and change the setting to high pressure and set the timer for 35 minutes.
12. When the timer goes off release the pressure and open the lid according to your pressure cookers manufacturers instructions.
13. You can pull out the beef and rip it into shreds if required.
14. Season with salt and pepper and enjoy as desired.
Hints and Tips:
- You could thicken the sauce with some cornflour if required.

I love my pressure cooker! I would have never thought to add fish sauce to a chili recipe, it sounds intriguing!

It’s just such an easy dish to put together! I’m sure there are more authentic Mexican chili recipes out there but this one is definitely tasty. I doubt the Mexicans put fish sauce, I think the salsa is the most important flavoring to this dish 😃
