– Date, Walnut, Coconut & Cranberry Bars –
These date, walnut, coconut and cranberry bars use simple ingredients, are easy to make and are certainly delicious! I love coming home after work and having something to snack on that gets me through until dinner time. They’re also a great addition as a lunch box treat for morning and afternoon tea. I found the recipe at Hedi Hearts a website that has a focus on eating and cooking clean.
Serves:
You can make 24 small thin slices or make them thicker and slice them like muesli bars

Equipment:
Baking tray, loaf tin or other appropriate container to set the bars in
Baking paper
Baking tray for toasting the walnuts
Ingredients:
1 cup pitted dates
2 cups walnuts
2 cups desiccated coconut
3/4 cup dried cranberries
1/3 cup desiccated coconut for coating the bars
Preparation:
- Grab out all your ingredients.
- Find a baking tin or appropriate container to set your bars in.
- Set your oven to 170C.
Method:
1. First grab your baking tray and cover it with some baking paper. Throw on your walnuts and place it in your preheated oven at 170C for 5 – 10 minutes. You just need to lightly toast these little babies.
2. When your happy that they have been lightly toasted pull them out the oven and let them cool.
3. Grab out your food processor or TM5 and chuck in the dates.
4. Next sprinkle in the cranberries.
5. Add in those lightly toasted walnutes.
6. Finally pour in the 2 cups of desiccated coconut. Set your TM5 to speed 5 for 1 minute or if your using a food processor just let it rip until its well combined.
7. Your mixture should look as pictured below and have a sticky texture that holds together. If its a little too crumbly add a little water a tablespoon at a time giving it a quick blitz each time.
8. When your happy with the mixture grab the container, cover it with baking paper and then pour the mixture in.
9. Press your mixture down so that it has an even surface and the mixture sticks together well.
10. As you can see the mixture develops a nice shiny smooth surface. Pop it in the fridge for at least an hour to set, depending on your desired thickness it could take two hours.
11. After its set grab it out and throw on the 1/3 cup of desiccated coconut.
12. Distribute the coconut evenly across the surface gently patting it in.
13. Carefully lift the mixture out of the container.
14. Cut it into your desired size, as you pick up each slice gently dust the bottom side of the bar with any of the coconut that falls off the top.
15. Serve and enjoy!!!
Hints and Tips:
- These will keep in the fridge for a week.
- Make sure you store them in a airtight container in the fridge.
- These will keep for at least a week in the fridge.
