Almond Meal

  • Also known as finely ground almonds
  • Used in baking and as a thickening agent.

Burghul

  • Burghul is a cracked wheat which has been hulled and steamed and once dried crushed into grains.
  • Also known as Bulghur wheat
  • Used in middle eastern dishes such as kibbeh and tabouleh.

Couscous

  • A grain like cereal product made from semolina.
  • You can be purchased in white or wholemeal varieties.
  • Keeps well for up to 2 years.

Cornmeal

  • Ground dried corn similar to polenta but slightly courser.

Cornflour

  • Also known as cornstarch.
  • Used as a thickening agent in cooking.
  • Keeps well for up to 9 months.

Flour – Plain

  • Made from wheat.
  • An all purpose flour.
  • Keeps well for up to 9 months.

Flour – Rice

  • Rice flour comes from ground medium grain rice.

Flour – Self Raising

  • Plain flour with baking powder added.
  • Used mostly for baking
  • You can make your own self raising flour by adding 2 teaspoons of baking powder to 1 cup of plain flour.
  • Keeps well for up to 9 months

Flour – Semolina

  • A creamy yellow flour.
  • Made from durum wheat.
  • Finely ground semolina flour is used to make pasta, when its ground more coarsely its used to make bread.

Flour – Strong

  • Strong flour is made from hard wheat and usually contains between 11% – 12% protein.
  • Strong flour is usually used in bread making and some pastry.
  • Keeps well for up to 9 months.

Flour – Tipo 00

  • Flour that has been ground and sieved extra fine.
  • Used to make pasta.

Polenta

  • Ground corn meal.
  • Can be served as a soft mixture, or firm blocks that have been grilled or pan fried.
  • Polenta comes in instant, regular, fine or course.
  • Keeps well for up to 1 year

Rice – Long Grain

  • Remains separate when cooked.
  • The most popular steaming rice in Asia.
  • Keeps well for up to 1 year

Rice – Risotto

  • Risotto rice varieties include: Arborio, carnaroli and vialone nano.
  • Risotto rice cooks to a creamy consistency with the grains remaining separate with a firm centre…..that’s when cooked properly.
  • Keeps well for up to 1 year

Rice – Arborio

  • A short grained rice used for making risotto
  • Keeps well for up to 1 year
